I am opening the season of harvesting. And, of course, the first thing that has grown in the garden is greenery. Sorrel, dill and green onions. I show you what kind of preparation I make for a delicious winter green borscht. A very simple recipe.

HOW TO COOK:
The hardest part here is to prepare the greens. Today I will show you how I harvest sorrel. But with sorrel, you can add dill, green onions, and a little nettle or spinach to a jar (if you like them in borscht). Important! Nettle or spinach should be no more than 10%, otherwise it will not be stored for a long time!
We don't add nettles or spinach to borscht, so I just harvest sorrel.
I wash the greens well and dry them. Here is such a sorrel in my dacha (it even grew a little):
I cut it as usual into borscht. I do not use the stems, I cut them off. BUT, of course, you can cut it together with the stems (they are also sour)!
I will sterilize the jars! In the video above, I showed how to do this in the microwave (the fastest way).
I fill the jars with chopped greens. Tightly! I press it well to fit more.
And now I just fill it with water! Plain cold water! Of course, the water must be clean! My mother pours the sorrel with spring water, I use filtered drinking water.
But, if you doubt the quality of the water, then it is better to boil and cool it.
I close the jars with lids. And that's it! I store it in the refrigerator or in the cellar in the country. In a cold place, such a workpiece is perfectly stored all winter!
The sorrel will change color over time. But all vitamins will remain in the jar! Yes, there is a drawback to such a workpiece - you need to wound only in the cold. But the sorrel is fresh!
