In the summer heat, you want light and mostly vegetable dishes. This also applies to soups. I suggest you try making a simple and bright summer vegetable soup with tomatoes. It turns out to be light, aromatic and very tasty.
It is prepared very simply and quickly. For hot summer days, such a first course is just a godsend.
This vegetable soup with tomatoes is perfect for a dietary or vegetarian meal. But you can also cook it in any meat broth, you get a more satisfying option.
Try this delicious and light vegetable soup this summer, it will pleasantly surprise you.
Ingredients:
- water - 700 ml
- potatoes - 300 g
- tomatoes - 500 g
- zucchini - 1 pc. (300 g)
- onion - 1 pc.
- carrots - 1 pc.
- dill - 1 bunch
- vegetable oil - 2 tbsp. l.
- salt - 1/2 tbsp. l.
- ground black pepper - to taste
- ground sweet paprika - 1/2 tsp l.
Step by step recipe
1. First, let's prepare all the vegetables.
Cut 300 g of potatoes into small pieces.
Cut 1 young zucchini lengthwise into two parts. Then we cut each part in half again and cut a quarter into circles. If the zucchini has a thick rind, it is better to cut it off.
2. Now we will peel the tomatoes. We take 3 medium sized tomatoes, with a total weight of about 0.5 kg. Cut out the stalk attachment point in each tomato.
For this recipe, it is advisable to take sweet, fleshy varieties of tomatoes.
On the other side of the tomato, we make a shallow cross-shaped cut with a knife.
Put the prepared tomatoes in boiling water for 10 seconds.
3. After 10 seconds, we transfer them from boiling water to cold water.
Tomatoes now peel very easily. We pick it up in the place where the incision was made and remove it in whole rags.
Cut the peeled tomatoes into cubes.
4. Finely chop a small bunch of dill.
5. Put prepared potatoes in a 2-liter saucepan and pour 700 ml of water or meat broth.
We put on fire and after boiling, cook for 5 minutes.
6. While the potatoes are boiling, we are preparing the vegetable sauté.
Cut 1 onion into cubes.
Cut 2 small young carrots into slices. You can also take one large carrot and grate it on a coarse grater.
7. Put chopped onion in a hot frying pan with a small amount of vegetable oil. When the onion is slightly gilded, add carrots to it. Saute everything until carrots are soft.
8. The potatoes have been boiling for 5 minutes, add chopped zucchini to it and cook for another 5 minutes.
9. 5 minutes have passed, add prepared tomatoes and sautéed vegetables to the pan.
Mix everything and cook for another 2-3 minutes.
10. At the end, salt the soup with about half a cup. l. salt, add 0.5 tsp. ground sweet paprika and pepper to taste. Add chopped dill to this.
Mix everything, the soup is ready.
The vegetable soup with tomatoes turned out to be very tasty with a pleasant rich tomato flavor. It is very easy to prepare it. If desired, meatballs can be added to this soup.
