A simple, light and fresh salad with radishes and cucumbers. It is bright, tasty and vitamin-rich. This is the most springtime salad I know!
It has an abundance of greenery, fragrant fresh cucumbers and a touch of radish. And boiled eggs add satiety to the salad.
I prefer to season this spring salad with unsweetened yogurt or sour cream. But it can also be seasoned with mayonnaise.
This radish and cucumber salad is perfect for a light dinner, a great snack or a juicy addition to a main dish.

Ingredients:
- radish - 200 g
- boiled eggs - 4 pcs.
- fresh cucumber - 2 pcs.
- green onions - 150 g
- dill - 1 bunch
- parsley - 1 bunch
- salad yogurt (sour cream) - 2 tbsp. l.
- salt to taste
- ground black pepper - to taste
Step by step recipe
1. First, let's prepare all the ingredients.
Wash 200 g of radish and cut into small cubes.
Cut 2 medium cucumbers into small cubes too.
Cut 4 boiled eggs into cubes.
2. Finely chop a small bunch of parsley.
Also finely chop a medium bunch of dill.
Grind about 150 g of green onions.
3. Put chopped cucumber, radish, green onion, chopped eggs, fresh chopped dill and parsley in a bowl.
Salt to taste and pepper. We fill with 2 tbsp. sour cream or thick unsweetened yogurt. Mix everything and serve.
The salad with radishes, cucumbers and herbs turned out to be fresh and light in spring. It prepares quickly and easily. Be sure to cook it while the radish season is still in full swing.
