This soup can be prepared simply in water or in broth. If you cook in broth, then I recommend it better with chicken (it is lighter, because in the heat you don't want to eat heavy food at all). Cook very quickly on the water!
I cut the courgettes and bell peppers into small cubes.
I cut the onion into small cubes.
I rub the carrots on a grater.
Add zucchini and a couple of bay leaves to boiling water (broth). Let them cook for 10 minutes.
In the meantime, I send carrots, onions to a preheated pan and fry for 5 minutes.
Then I add bell peppers and carcass under a closed lid.
After 5 minutes, salt and pepper, add more sweet paprika for piquancy.
The zucchini were just cooked. I add the fried vegetables and stir. Turn off the stove. Try with salt, if not enough, add salt.
Now comes the fun part. I take a hand blender and puree the soup. I add greens.
If you wish, you can add a little low-fat cream (my husband especially loves it).
If you're making soup with water, try adding. The taste becomes "richer". Then you need to bring the soup to a boil again.
