Today I want to share with you a recipe-find that will surely awaken in you a gastronomic love for the liver. Instead of soaking in milk for a long time, there is a minute way to soften it and get rid of the specific smell.

📕Ingredients for cooking: 🥙

Liver (I had chicken, but you can take another) - 500 g
Onions - 2-3 medium sized heads
Sugar - 0.5 tsp l.
Vegetable oil - 2-3 tbsp. l.
Garlic - 1-2 cloves
Sour cream (15-20% fat) - 3-4 tbsp. l.
Ready mustard - 1 tsp l.
Water - 2 tbsp. l. (if necessary)
Black pepper and other spices to taste
Salt - 0.5 tsp l. (taste)

👨🏻‍🍳 Let's start cooking... ⤵️⤵️⤵️

We wash the liver, cut into portions and put in a deep bowl. Then fill it with boiling water and set it aside for 2-3 minutes. Then we drain the water and put the liver in a colander.

We clean and cut several onions into thin half rings. Pour vegetable oil into the pan and heat it well, lay the prepared onion. Sprinkle with sugar, mix. Fry over medium heat, stirring occasionally with a spatula, until golden brown.

Meanwhile, clean and chop the garlic finely. Add it to the seared onion and fry it all together for a couple of minutes.

Now put the liver in the pan and reduce the heat. Cook for about 3 minutes, turning the liver pieces with a spatula so that it grabs on all sides. Salt and pepper during the roasting process.

At this time, we are preparing the fill. Mix sour cream, mustard, a little salt and spices in a bowl. If necessary (if the sour cream is thick), add a little water and stir everything well.

This is how the liver will look like after three minutes of languishing.

Pour the prepared filling into the frying pan for the liver, stir, cover and simmer for 10-12 minutes over low heat. Stir the dish periodically so that it does not burn and cook evenly.

The liver turns out to be very tender, juicy, soft, aromatic. Potatoes in any form, pasta, rice and other cereals are ideal for garnish. And don't forget about fresh vegetables.
