Deliciously delicious strawberry cream chocolate roll will win you over. It harmoniously combines chocolate biscuit and the most delicate cream with strawberries based on Philadelphia cheese. And this roll is incredibly beautiful in section! No one will refuse a piece of such a delicacy.
Preparing such a chocolate biscuit roll with strawberries is not too difficult, it is only important to observe some of the nuances and you will succeed!

By the way, such a chocolate roll can be prepared not only with strawberries. Try it with other seasonal berries like raspberries, blueberries, blueberries.
This dessert is perfect for family tea drinking and for receiving guests. Be sure to cook it during the berry season, it is not difficult and very tasty!

Ingredients:

Biscuit:

  • eggs - 4 pcs.
  • sugar - 100 g
  • flour - 75 g
  • starch - 25 g
  • cocoa - 25 g
  • baking powder - 1 tsp l.

Cream:

  • cream cheese (Mascarpone) - 250 g
  • water - 150 ml (75 ml + 75 ml)
  • strawberries - 250 g
  • sugar - 3 tbsp. l.
  • starch - 30 g
  • water - 25 ml
  • gelatin - 2 tsp l.

Step by step recipe

1. First, let's make a biscuit.
4 eggs separate the white and the yolk.

2. Begin to beat the whites and add a pinch of salt. When the whites beat up a little, gradually add 100 g of sugar. Be sure to beat until fluffy, stable foam.

3. Add the yolks to the whipped whites one at a time, while not stopping whipping.

4. Pour 75 g of flour, 25 g of starch, 25 g of cocoa and 1 tsp into a sieve. baking powder.

5. Sift loose ingredients into a bowl with beaten eggs in 2-3 approaches. After each, gently and briefly stir with a spatula.

6. Put the finished dough on a baking sheet covered with parchment paper. Spread the dough on a baking sheet in an even layer. The inner size of my baking sheet is 32 * 42 cm.

7. We put everything in the oven preheated to 180 degrees. Up + down mode. We bake for about 12 minutes.

8. Remove the baked biscuit from the oven and immediately transfer it to the board, remove the parchment paper. Transfer the sponge cake to a clean and dry kitchen towel. We roll the still hot sponge cake into a roll with a towel. We leave everything in this form until the biscuit cools down.

9. Put 250 g of already washed strawberries in a saucepan, pour 75 ml of water and add 3 tbsp. l. Sahara.

10. Beat everything with an immersion blender until smooth.
We put the stewpan on the fire.

11. In a separate bowl, combine 30 g of starch and 75 ml of water. We mix everything.

12. When the strawberry mixture begins to boil, pour the starch diluted with water into it. We brew the jelly, stirring constantly, so that there are no lumps. Remove the finished thickened jelly from the stove and let it cool completely.

13. We take 2 tsp. gelatin and pour 25 ml of water. Mix everything and leave the gelatin to swell for at least 10 minutes.

14. Put 250 g of mascarpone cheese in a separate bowl. We begin to beat and 1 tablespoon each. add strawberry jelly. Beat for a short time. Mascarpone can be replaced with other cream cheese such as Philadelphia.

15. We dissolve the swollen gelatin in the microwave and add 1 tbsp. l. cooked cream. Mix well.

16. Add this mixture to the cream in 2-3 approaches and mix. To thicken the cream a little, put it in the refrigerator for about 15-20 minutes.

17. It took 20 minutes, the cream grabbed and became more stable. Unwind the roll and remove the towel. Lubricate the whole roll with the prepared cream evenly.

18. Gently roll the sponge cake with cream into a roll. When folding the roll, do not squeeze too much so as not to squeeze out the cream.
We wrap the resulting roll in plastic wrap and put it in the refrigerator for several hours.

Cut the finished roll into portions and serve.
The roll turned out to be very tasty and moderately sweet. It perfectly combines rich chocolate biscuit and delicate strawberry cream on the basis of cream cheese. This roll is great for dessert on the festive table. If desired, strawberries can be substituted with other berries, such as strawberries, blueberries or blueberries.
