Delicate and airy pumpkin pancakes. They get a beautiful golden color, moderately sweet, with a pleasant pumpkin aroma. Such pancakes are eaten even by those who do not particularly like pumpkin.
These pancakes differ from the usual classic ones and are prepared in milk with the addition of oatmeal. Due to the separate whipping of the proteins, you do not need to add soda and baking powder to them. They are already lush and airy.
These sunny pumpkin pancakes can be prepared for a snack or afternoon tea and served with honey or jam to milk.

Ingredients:
- oatmeal - 200 g
- pumpkin - 200 g
- eggs - 3 pcs.
- flour - 100 g
- milk - 1 tbsp.
- salt - 1/2 tsp l.
- sugar - 2-3 tbsp. l.
- sunflower oil - for frying
Step by step recipe:
1. We start by filling the oatmeal with milk. Stir and let them brew until they have absorbed all the milk.
2. We clean the pumpkin from seeds and peel. Three of it on a coarse grater.
3. Add grated pumpkin to the swollen oatmeal.
We divide the eggs into yolk and white. Leave the protein in a separate bowl and add the yolk to the pumpkin and oatmeal.
4. Add a little salt to this, 2 tbsp. l. sugar and flour.
Mix everything until smooth.
5. Add half a tablespoon of sugar to the proteins and beat until dense foam.
6. Add the whipped egg whites to the oat mixture and mix gently.
7. Pour a little sunflower oil into a preheated pan and begin to fry the pancakes. Put the dough in a frying pan with a tablespoon. One spoon - one pancake.
Fry pancakes on both sides over low heat until a beautiful golden crust.
These pancakes have a pleasant pumpkin flavor. They can be served with sour cream, honey, jam, or jam.
