Notable cucumbers come out according to this recipe - crispy, sweet, aromatic and not at all sour.
Delicious pickle brine can be drunk, it perfectly refreshes. And how transparent it is! See for yourself! The photo shows a jar from my closet in the corridor, it miraculously "survived" and stood there for almost three years. They just pushed it into the far corner with other banks and forgot. But already ate, don't worry :).
How to make such?
Ingredients:
2 kg pickled cucumbers
2 leaves of black currant and raspberry per 1 liter jar
dill umbrella on a jar
5 black peppercorns per can
1-2 bay leaves per jar
2 allspice peas per jar
mustard seeds - optional, but no more than a quarter teaspoon
citric acid (secret ingredient!)
Marinade:
1 liter of water
25 gr. salt (best measured in grams)
1 tbsp. l. sugar with a slide
How to cook:
1. Select the most dense and beautiful cucumbers. Soak for 2-3 hours in ice water. Rinse each one by hand in running water.
2. Sterilize the jars, turn over on a towel and dry.
3. Put the right amount of herbs in each jar.
4. Place prepared cucumbers tightly in jars.
5. Boil water and pour boiling water over the jars along the "shoulders". Cover with lids or gauze. Leave on for 10-15 minutes.
It is very convenient to harvest cucumbers in liter jars, the main thing is to thoroughly wash and sterilize them.
6. Drain the cucumbers and pour clean fresh boiling water over them.
7. Measure the liquid drained for the first time in liters. Measure out the same amount of clean fresh water + 1 glass. From the calculation of the displacement obtained, prepare the marinade with the addition of sugar and salt. Boil the solution until the salt crystals disappear completely.
8. Drain the water from the cucumbers a second time. She is no longer needed. Add bay leaves, chili peppers and mustard to each jar as desired.
9. Pour boiling marinade over the jars. Now it's the turn of citric acid. Since the cans are small, you need to add it a little and carefully. For a 1 liter jar, you will need about 1/5 of a teaspoon or acid at the tip of a knife.
10. Immediately after adding acid, the cans should be rolled up, preferably with boiled lids. Screw or wrench. It makes no difference, as it is more convenient for you, roll it up.
11. Turn the cucumbers on a newspaper or cloth, check for leaks and leave upside down to cool and the lids are pulled in. You can wrap it up, but not necessarily.
Be sure to place the jars in the refrigerator after 12 hours for a day to cool completely. Then put it away for storage. In any closet in the apartment. Checked! They are great, do not rip off the lids and are delicious!
