Rich, tasty and homemade soup with mouth-watering meatballs is an excellent first course that is very quick and easy to prepare.
Ingredients:
3-4 potatoes
300 gr. minced meat
onion head
carrot
a handful of fine vermicelli
2 tbsp. l. semolina
2 bay leaves
water
dill or parsley
salt
black peppercorns or ground
vegetable oil
How to cook:
1. Salt and pepper the minced meat, add semolina, mix well. Some add boiled or even dry rice to the minced meat, and sometimes they also add onions with flour. Such minced meat is kneaded and meatballs are made from it. It's not meatballs, but delicious too.
2. Form small dense balls of minced meat with water-moistened hands, a little smaller than a walnut. In general, it is believed that the smallest meatballs are the most delicious and in the finished soup they look much more appetizing than the large ones.
3. Peel the onion, cut into small cubes. Grate carrots on a coarse grater.
4. Peel the potatoes, cut into cubes. Spread everything together in vegetable oil. If the soup is dietary, then raw carrots and onions are put into the broth, and the oil for the "sparkles" is simply poured into it, a couple of tablespoons.
5. Pour the required amount of water into a saucepan, bring to a boil.
6. Dip the peeled and diced potatoes in boiling water. Add onions and carrots roasted or raw, as described above.
7. Bring the contents of the saucepan to a boil, season with salt and pepper, add bay leaves.
8. Once the potatoes are almost ready, it's time to put the meatballs one at a time into the boiling soup.
9. Cook for 10-20 minutes depending on the size of the meatballs.
10. Pour in the noodles, cook for 1-3 minutes (or as indicated on the packaging with the noodles).
11. Grind the herbs, fill the soup with it and immediately turn off the heat. To cover with a lid. Let the soup steep for a couple of minutes.
