Cooking method:

Cooking meringue: add a pinch of salt to the proteins and start beating, when foam appears, start adding sugar. Beat the whites until a dense stable foam, add 150 g of coconut flakes, vanillin, mix until smooth.

We transfer the protein-coconut mixture to a form covered with parchment paper (take good paper - I use only siliconized). We bake in the oven at t 160-170 ° 35-45 minutes. (prepare the meringue in advance, it will be more convenient).

We prepare the dough: we separate the proteins from the yolks, add a pinch of salt to the proteins and start beating until foam appears, add sugar in parts - beat. Now we introduce the yolks one at a time, beat until smooth (this will take a minute). 15)

Now we introduce the SIFTED flour and gently and briefly mix with a spatula. We bake the finished dough at t 180 ° for 30 minutes. (I have a 22 * ​​35 form, use only good parchment paper when baking). Let the finished biscuit cool completely.

Prepare the cream: Drain the juice from pineapples (separately take 3 tbsp. l. juice for soaking biscuit). dilute the rest of the juice with water up to 500 ml. Dilute the pudding (packing 40 gr) with juice, put the rest of the juice on the fire and add the diluted pudding, constantly stirring, as soon as the jelly has thickened, remove from heat and leave to cool (cover with cling film in contact).

Beat soft butter and add 1 tbsp. l. pudding. Add chopped pineapples to the butter cream, mix everything.
