Real Lithuanian cold borscht

Not only okroshka, botvinya or chill are relevant on hot summer days.

We invite you to familiarize yourself with an amazing Lithuanian dish - it is something like borscht, but cold. With cucumbers and always with homemade yogurt. But you can also make on kefir.

So, the recipe!

Ingredients:

  • 2 medium beets
  • 2 eggs
  • 1 fresh cucumber
  • greens (dill, parsley, green onions)
  • 1 liter of homemade yogurt (ferment milk with a slice of black bread for a day in the room)
  • potato
  • salt
  • pepper

How to cook:

1. Boil or bake beets in the oven. Cool, peel and grate one beetroot, you can pass it through a meat grinder or chop with a blender in mashed potatoes. But the second beet must be cut into small cubes.

2. Boil eggs in a steep one. Peel, cut into small pieces. You can also grate or crush with a fork into crumbs.

3. Chop the cucumbers into cubes.

Important! Beets and cucumbers are often just grated. If it is more convenient for you, then you can use this method.

4. Finely chop the greens.

5. Boil potatoes separately, it will be served with a bite on a plate, sprinkled with dill, to cold borscht.

6. Collecting Lithuanian borscht: combine both beetroots, cucumber, eggs and herbs in a saucepan.

7. Pour borscht mixture with cold yogurt or kefir. You can dilute with 1 cup of cold boiled water if it suddenly seems too thick.

8. Salt the dish, season with ground black pepper.

When serving, add slices of boiled eggs to each plate for beauty, as well as a little lemon juice or sour cream for taste.
