My two secrets that make perfect pancakes. I have a lot of pancake recipes on the channel, and I think I found my perfect one. Well, the truth is, the pancakes are just super - thin, with holes and very tasty.
So, I’m telling you how I cook them.
Ingredients:
Kefir
Milk
Eggs
Flour
Sugar
Salt
Soda
Vegetable oil
There is nothing special about the ingredients. The whole trick is not in them, but in HOW and in WHAT SEQUENCE to add.
Secret first
It consists of kefir. It must be heated up. I used to knead pancake dough with cold kefir. And now only on the warm. I heat it up to the point where the steam already starts to rise a little and the serum separates. As soon as I see the serum appearing around the edges, I immediately remove it from the stove.
So, I heat 1 liter of kefir, add 2 tablespoons of sugar, 1 incomplete teaspoon of salt, half a teaspoon of soda and stir. Kefir will begin to increase in volume, foam - the result is not the same with cold kefir.
Second secret
It is in the order of the ingredients. If before the next ingredient I had eggs, now flour. I add it to the eye, put it so much that it turns out a thick dough, like on pancakes.
And now eggs - 3 pcs. I stir, add cold milk to get a liquid consistency, a little vegetable oil and you can bake pancakes. I myself do not understand how it works, but it is this order that makes the pancakes just perfect. And they differ from others)) This is not only my opinion, but the opinion of the whole family)
It would seem - nothing special, the ingredients are the same. BUT! I assure you, the pancakes cooked in this way are just perfect.
I serve them with condensed milk or jam. Now we eat mostly just strawberries, mashed with sugar.
