Many people do not like eggplant, and in vain. Eggplants are very respected at home, especially me. Today I want to present to you my favorite recipes for their "participation".
Armenian salad
Ingredients:
- Eggplant 3 pcs
- Red onion 1 pc
- Pomegranate seeds
- Cheese "Sirtaki" 150 - 200 grams
- Vegetable oil for refueling
- Parsley or cilantro
How to cook:
Cut the eggplants into plates and fry on both sides in vegetable oil, when they cool down, cut into strips 1 cm wide.
Cut the red onion into strips and pickle with vinegar mixed in equal proportions with water. Peel the pomegranate, chop the herbs finely. Cut the cheese into small cubes.
Season eggplants, onions and pomegranate seeds with vegetable oil and mix well, put on a serving dish. Top with cheese cubes.
Eggplant boats with filling
Ingredients:
- Eggplant 3 pcs
- Onions 1-2 pieces
- Tomatoes 2-3 pcs
- Garlic 1-2 cloves
- Suluguni cheese 150-200 grams
- Salt, spices to taste
How to cook:
Cut the eggplants lengthwise, grease with vegetable oil and bake at 180 degrees for about 30-40 minutes. Chop the onion and fry with garlic and spices until tender.
Cut the tomatoes and cheese into small cubes and mix with the cooled onion. Stuff the boats with the resulting filling.
Meat baskets stuffed with eggplant
Ingredients:
- Minced meat (with onions and garlic) 800 grams
- Eggplant 2 pcs
- Bechamel sauce 300 ml
- Garlic 2-3 cloves
- Tomatoes 2-3 pcs
- Salt and spices to taste
How to cook:
Bake the whole eggplants in the oven, then peel and cut into small cubes. Add to the hot Béchamel sauce and heat.
Form small baskets from minced meat and fill them with the resulting sauce.
Send them to bake in the oven at 180 degrees until the minced meat is cooked.
Cut the tomatoes into small cubes, season with salt and place on top of the hot baskets and serve.
