I love eggplants at home, I cook them quite often in the summer and especially in the fall. Basically, these are various salads and snacks, today I will tell you three original recipes at once, I am sure that many will like them.
Eggplant and bell pepper salad
Ingredients:
- Eggplant 2 pcs medium
- Bell pepper 1 pc
- Onion 1 pc (large)
- Boiled meat 200-250 grams
- Greens
- Dry garlic, black pepper and salt to taste
- Mayonnaise or sour cream with mustard for dressing
How to cook:
- cut the onion into quarters into rings and fry in vegetable oil
- cut the eggplants into cubes and fry in the same pan with the addition of salt and dry garlic
- disassemble boiled chicken into fibers
- cut the pepper into strips
- Mix all the ingredients in a salad bowl, season with mayonnaise or sour cream mixed with mustard
"Prisoner of the Caucasus" salad
Ingredients:
- Boiled beef 300 grams
- Eggplant 1 piece large
- Onion 1 pc
- Walnut 60 grams
- mayonnaise
- 3-5 cloves of garlic
How to cook:
- cut the meat into cubes
- cut the eggplant into cubes and fry in a pan with salt and garlic
- chop the nuts into coarse crumbs with a knife
- Mix all the ingredients in a salad bowl and season with mayonnaise
"Armenian" salad
Ingredients:
- Eggplant 3 pcs
- Red onion 1 pc
- Pomegranate seeds
- Cheese "Sirtaki" 150 - 200 grams
- Vegetable oil for refueling
- Parsley or cilantro
How to cook:
- cut the eggplant into plates and fry in vegetable oil until tender, then cut into strips
- cut the onion into half rings and pickle in vinegar mixed with water in equal proportions
- dice cheese, peel pomegranate
- season the eggplants, onions, herbs and pomegranate seeds with olive oil, top with slices of cheese and serve
