Such a sour cream cake with berries is prepared very simply and rather quickly. Even a novice hostess can handle this cake. Berries can be added absolutely any according to the season and your taste.

Ingredients:

Biscuit:

  • sour cream 15-20% - 250 g
  • flour - 240 g
  • sugar - 200 g
  • eggs - 3 pcs.
  • soda - 1 tsp l. without slide

Cream:

  • sour cream 20% - 600 ml
  • sugar - 150 g
  • vanilla sugar - 10 g
  • red currant - 250-300 g
  • blueberries - 250-300 g

Step by step recipe

1. First, bake a sour cream cake for the cake.


Break 3 eggs into a bowl. Begin to beat and gradually add 200 g of sugar. Beat well. The eggs should expand in volume and all the sugar should dissolve.

2. We take 250 ml of sour cream and pour 1 tsp into it. soda without a slide. Mix well. There should be a reaction. Sour cream will become airy and increase in volume. Sour cream can be used 15% fat.

3. Immediately pour the prepared sour cream into the beaten eggs. We mix everything.

4. Pour 240 g of flour into this mass and mix again.

5. We transfer the dough into a mold, the bottom of which is covered with parchment paper.
We put in the oven preheated to 180 degrees. We bake for about 35-45 minutes. We check the readiness with a wooden stick.

6. The biscuit is baked, leave it to cool.

7. Cut off the top of the cooled biscuit. Using a knife, carefully cut out the entire middle of the biscuit. Leave the edges and bottom.

8. Break the biscuit into pieces and put it in the chopper bowl. Grind everything into crumbs. Also, the biscuit can be crumbled by hand.

9. Preparing the cream.
Pour 600 ml of sour cream into a bowl. It is advisable to use sour cream with a fat content of 20-25%. Pour in 150 g of sugar and 10 g of vanilla sugar. Beat everything with a mixer until smooth.

10. Add a thickener for sour cream or cream to the cream. Beat everything again. Take the amount of thickener as indicated on the package. I added one and a half packs of thickener, each of which is designed for 400 ml of sour cream. If no thickener is available, you can add about 150 g of lemon juice. it will thicken sour cream too.

11. About 3-4 tbsp. put the sour cream in a separate bowl, it will come in handy later.

12. Pour the prepared biscuit crumbs into the rest of the cream. Mix everything well.

13. Add 150 g of red currants and 150 g of blueberries to the same mass. Mix the cream gently and briefly.

14. Put the prepared mass in a biscuit base. We form a beautiful hill.

15. Cover the top with the left sour cream.
Decorate the cake with blueberries and red currants. Optionally, you can also decorate the cake with mint leaves. The cake is ready.
