Ingredients:
- cottage cheese - 800 g
- condensed milk - 1 can (380 g)
- shortbread cookies - 300 g
- butter - 130 g
- nectarine (peach) - 2 pcs.
- water - 100 ml
- gelatin - 15 g
Step by step recipe
1. First, let's prepare the base for the cake.
Break 300 g of shortbread cookies and put in a grinder. Grind everything to small crumbs. Since I have a small chopper, I chopped the crumbs in two approaches.
2. Pour the prepared crumb into a bowl. Pour 130 g of melted butter here. Mix everything until smooth.
3. Pour this mass into a mold, the bottom of which is covered with parchment paper. Distribute it evenly and tamp it with a spoon. The diameter of my mold is 21 cm. Put it in the refrigerator to freeze.
4. While the base for the cake hardens, prepare the curd layer.
Pour 15 g of gelatin into a bowl and pour 100 ml of water. Mix everything and leave the gelatin to swell for 10 minutes.
5. Pour 800 g of cottage cheese into a large bowl. Cottage cheese can be used with any fat content. Knead the cottage cheese with a fork to chop up large pieces that have stuck together. If desired, cottage cheese can be chopped with an immersion blender. It is advisable to get the cottage cheese out of the refrigerator 10-15 minutes before cooking, so that it warms up a little. Then, with the introduction of gelatin, no gelatinous lumps will form.
Pour 1 can of condensed milk here. We mix everything.
6. The gelatin is already swollen. We dissolve it in the microwave. We heat it for 10 seconds, stirring each time. So we repeat 3-5 times. The gelatin should heat up to about 50 degrees.
7. Pour the heated gelatin into the curd mixture in 3 approaches. Stir well immediately each time.
8. Put the prepared mass on the cooled layer of cookies. Distribute it evenly over the entire form and leave it on the table.
9. Cut 2 nectarines or peaches in half and remove the pit.
Cut the nectarine halves into slices 2-3 mm thick.
10. Immediately, while the cake has not yet frozen, insert the plates of nectarines into the cake. In the center we put a circle of nectarine, and around it we insert the plates, peel up. We press them into the curd mass. This is how we decorate the whole cake.
11. Put the finished, already decorated cake in the refrigerator to freeze, for at least 2 hours.
The cake is frozen. Gently use a thin knife to pass between the cake and the mold. Remove the mold and place the cake on the platter.
The curd cake with nectarines turned out to be very tasty and moderately sweet. Nectarines not only give it a beautiful appearance, but also complement the taste. Preparing such a cake is very simple and fast enough. In hot weather, this is one of the best recipes.
