Summer is the time for delicious homemade pies with berries and fruits. Here's a variation on one of my favorite berry pies. It perfectly combines a sandy base and a mix of your favorite berries. My family really likes this dessert with tea or a glass of cold milk.
Moreover, you can cook such a cake all summer long, each time adding fruits and berries according to the season. This is a very versatile cake!

And preparing such homemade cakes is not at all difficult and fast enough. The pie turns out to be beautiful and aromatic. He breathes with home comfort.

Ingredients (for a 26x26 cm mold):

Dough:

  • flour - 400 g
  • butter (cold) - 250 g
  • sugar - 150 g
  • egg - 1 pc.
  • baking powder - 2 tsp. (no slide)
  • lemon (zest only) - 1 pc.

Filling:

  • raspberries - 400 g
  • blueberries - 150 g
  • nectarine - 1 pc.
  • sugar - 2 tbsp. l.
  • starch - 2 tbsp. l.

Step by step recipe

1. First, let's prepare the dough.
Pour 400 g of flour into a bowl, put 250 g of cold butter, cut into small cubes. First, roll the butter in flour with a spoon, and then grind it with your hands into crumbs. This should be done quickly enough so that the oil is heated as little as possible by the warmth of the hands.

2. Pour 150 g of sugar and 2 tsp here. without a slide of baking powder. Remove the lemon zest from one lemon. We use only the yellow part. We mix.

3. Break 1 egg into a separate bowl and beat it with a fork. Pour the beaten egg into a bowl.

4. Mix everything first with a spoon, and then with your hands. We mix the dough quickly and for a short time. As soon as the dough has gathered in a lump, stop stirring. This dough does not like to be kneaded for a long time.

5. Tear off the third part of the dough, put it in a bowl and put it in the refrigerator to cool.

6. Put the remaining dough into a mold, the bottom of which is covered with parchment paper. Spread the dough evenly with your hands over the entire bottom.

7. We put the prepared base of the pie in the oven preheated to 180 degrees. up + down mode. We bake for about 10-15 minutes.

8. While the dough is baking, prepare the filling.
Cut one nectarine in half and take out the bone. Cut the nectarine into cubes.

9. Pour the prepared nectarine, 150 g of blueberries and 400 g of raspberries into a bowl. Here we add 2 tbsp. l. sugar and 2 tbsp. starch. Mix everything gently. You can use any berries and fruits that are available or that you like the most. Their total weight should be approximately 700-800 g.

10. The base is already a little baked. We take it out of the oven. We spread the prepared berries on it and distribute them evenly over the surface of the cake.

11. We take out the part of the dough that was left from the refrigerator. We tear off small pieces from it and put on the berries. If desired, this dough can be frozen and grated.
We put everything in the oven preheated to 180 degrees. bake for about 30-40 minutes.

12. We take out the baked pie from the oven and let it cool completely.
When the cake has cooled down, detach the edges from the mold with a knife. We take it out of the mold and carefully place it on the dish.
Cut the pie into portions and serve.

The berry pie turned out to be very tasty and aromatic. It perfectly combines sweet shortbread dough with pleasant sourness of berries and fruits. The berries also add juiciness to this cake.
