- Fresh mushrooms need to be sorted out, rinsed, coarsely chopped and boiled in boiling water for 15 minutes.
- Then fold over a sieve.
- All vegetables must be peeled and chopped coarsely.
- In a preheated, oiled frying pan, fry vegetables in this order:
garlic 15 seconds
onion for 1 minute,
tomatoes for 1-2 minutes.
- Add mushrooms to vegetables and fry all together for 5 minutes.
- Pass the mass through a meat grinder and return to the pan.
- Bring to a boil and simmer over low heat for 25 minutes.
- Then add salt, vinegar, pepper, sugar and heat for another 5 minutes.
- On this, the caviar is ready.
- If you want to prepare it for the winter, add vinegar at the rate of 1 tsp. for a 0.5 liter jar.
- Sterilize cans of caviar for half an hour, then roll up.
