Hi friends! I suggest making creme brulee ice cream. If you do not want to use gelatin for some reason, take 8 grams of cornstarch instead. Both starch and gelatin serve the same function, preventing large ice crystals from forming in ice cream.

- Milk is preferable to take with a fat content of 3.2%.
- Heavy cream should be in the refrigerator.
- Pour gelatin with water, stir and leave to swell.
- Pour one portion of sugar into a saucepan and make caramel.
- Mix 50 ml of hot milk into the finished caramel.
- Warm up everything until sugar dissolves.
- In another saucepan, mix the second portion of sugar, dry and fresh milk.
- Mix everything until smooth and pour in the caramel.
- Put on the stove and bring to a boil while stirring.
- Warm up for half a minute and add the swollen gelatin.
- The mass should cool down to room temperature.
- Remove the cold cream from the refrigerator and beat until fluffy.
- Without stopping the mixer, stir in all the cooled mass into the cream.
- Pour ice cream into a suitable container, close and place in the freezer.
Stir ice cream in a container 3-4 times every hour and a half.
If there is an ice cream maker, then it is not necessary, everything will mix by itself.
Composition of Creme Brulee ice cream according to GOST:
sugar 40 g
milk powder 30 g
fresh milk 280 ml
cream 100 ml
gelatin 3 g
water 15 ml
Caramel:
40 g sugar
50 ml milk
