Mushroom noodles - a summer option that makes your mouth water

This dish, hearty and tasty, is good to cook in the summer - firstly, because the body does not so aggressively require meat; and, secondly, its preparation takes very little time. Its (time) can be further reduced by taking some ready-made sauce, for example, the same teriyaki that is familiar to everyone. However, it tastes better with a sauce made by yourself - there you can balance the sweet and sour taste as you like it.

It comes from China, by the way. And if the home ones wrinkle their noses - they say, again pasta, again vegetables, you can poke at them, saying that a very fashionable meal on the table is noodles with wok mushrooms and gongbao sauce!

So, we take:

  • Noodles - according to appetite. Udon will do, but if not, any flat noodles. More - if everyone is hungry, less - if a light meal is planned.
  • A couple of bell peppers;
  • Chili pepper - one piece;
  • A pound of champignons;
  • A bunch of green onions;
  • A handful of roasted peanuts;
  • Salt, pepper to taste and oil for frying

For the sauce:

  • Three tablespoons of light soy sauce and three of dark;
  • Three tablespoons of water;
  • Three tablespoons of sugar and three spoons of rice vinegar. But here it is better to try and change the proportions - as you like best;
  • A couple of finely chopped garlic cloves;
  • Starch for thickening the sauce - a heaping spoon

How we cook:

For the sauce, dissolve the starch in cold water, add the rest of the ingredients, mix and set aside for now.

Boil udon according to the instructions on the package.

We clean the mushrooms, cut into quarters, cut the bell pepper into strips, chop the green onion; and clean the chili pepper from pulp and seeds and cut into small rings.

Now we heat a little oil in a high frying pan or wok - heat well, you need a high temperature. First of all, we send bell peppers and chili peppers there - fry for three minutes. Add mushrooms - fry for five minutes, salt and pepper.

Pour the sauce and add the green onions. Bring the sauce to a boil, mix everything well, add the fried peanuts. Try vegetables and mushrooms - if it's ready for your taste, then you can add udon, warm it up and serve.

If the vegetables and mushrooms are still damp for you, then stew a little, and add the noodles later.
