A great way to preserve overripe cucumbers. Delicious salad for the winter. I even let the cucumbers overgrow on purpose in order to prepare more! With potatoes in winter... And sometimes I even serve it on the New Year's table. Very tasty!
Cucumbers for this recipe are exactly overripe! You can even take completely yellow ones! Today I have these (I haven't been to the country for three):
Be sure to peel the cucumbers. If the cucumbers are already very overripe and the seeds have become tough, then I remove the middle with a teaspoon.
My seeds are still "edible", so I don't clean the middle, but immediately cut the cucumbers.
You can cut it in different ways. Can be cut into cubes, for example, or into cubes. But I love it like that. I cut the cucumber lengthwise and then cut it into half rings, about a centimeter thick.
I put it in a saucepan, add chopped herbs, salt, sugar, vinegar, black pepper and garlic. If you do not like hot, add 2 times less black pepper. But I still recommend prescription. It turns out a very tasty salad, moderately spicy!
I stir and leave on the table for about 3 hours (so that the cucumbers are pickled). They are so tasty and aromatic that in an hour my boys are already trying them))
After 3 hours, I put the cucumbers in the jars. Usually it turns out 5 half-liter jars. Today I have jars of slightly larger volume (550 ml), so it turned out 4 and there is a little salad left.
I put the leftovers into a plastic container and in 5-7 days we will eat this salad for lunch with potatoes! Lettuce must be allowed to brew!
I put the jars in a large pot of water, cover them with lids and sterilize for 10 minutes. Be sure to put a towel at the bottom of the pan.
It remains to tighten the jars tightly and wrap them until they cool completely.
The salad must be allowed to brew for at least a month. If you open it right away, it will not be quite right! But in winter, with mashed potatoes, for example, or with hot soup - what you need! Delicious preparation! Plus it helps to "attach" overripe cucumbers! Try it. I sometimes let the cucumbers overgrow on purpose to make this salad!

RECIPE:
• Cucumbers - 2 kg (already sliced weight)
• Parsley greens - 0.5 stack.
• Sugar ~ 0.5 stack. (90-100 g)
• Vegetable oil - 0.5 stack. (100 ml)
• Vinegar 9% ~ 0.5 stack. (90 ml)
• Ground black pepper - 1 tbsp. (no slide)
• Salt - 2 tbsp. (no slide)
• Garlic - 1 tbsp. (squeezed out through the press)
*** Glass 200 ml !!!
If you do not like spicy - take less pepper!
