During the fresh season, I cook this salad very often. It turns out to be juicy, tasty and bright. It is vitamin-rich and satisfying enough. And also it turns out a lot, so that it is perfect for dinner with the whole family or a large company.
I also like this salad for its versatility. It can be wrapped in pita bread or tortilla as a filling. And you will get a great and healthy enough snack. Both adults and children will be happy to try this a la shawarma.

Ingredients:
- meat - 800 g
- cucumbers - 4 pcs.
- tomatoes - 2 pcs.
- young white cabbage - 1/2 pc. (300 g)

Sauce:
- unsweetened thick yogurt - 200 ml
- garlic - 2-3 cloves
- lemon juice - 2-3 tbsp. l.
- salt - 1/2 tsp l.
- ground black pepper - to taste
Step by step recipe
1. First, let's prepare the vegetables.
Cut 4 medium cucumbers in half and cut into semicircles.
Cut 2 tomatoes into 4 pieces and cut out the stalk. Cut the tomato quarters into slices.
2. Three carrots on a coarse grater.
Finely chop about half a head of young white cabbage with a knife.
3. Chop a bunch of green onions. Instead of green onions, you can use onions by cutting them into half rings.
4. Let's prepare the meat.
Wash 800 g of meat and dry with paper towels and cut into plates along the fibers. Cut the resulting slabs of meat into small pieces across the fibers. I use pork, but you can also use chicken or veal.
5. Salt the meat to taste and pepper. Spread the seasonings over the meat with your hands.
6. Put the prepared meat in a preheated pan with vegetable oil. Fry over high heat until tender, stirring occasionally. We do not fry the meat all at once, but in small batches. This will make it more juicy and tasty.
7. Put chopped cabbage, fried meat, grated carrots, cucumbers, tomatoes and green onions in a bowl. We mix everything.
8. Preparing the dressing.
Pour 200 ml of thick yogurt into a bowl, salt with about half a tsp. l. salt, squeeze 2-3 cloves of garlic through a press and pepper with ground black pepper. We squeeze out about 2-3 tbsp here. lemon juice. Mix everything, the sauce is ready.
This dish can be served as a salad, seasoned with cooked sauce. It is perfect for a festive table. From this amount of ingredients of such an appetizer salad, a lot is obtained, which is great for a large family or a friendly company.
