The original presentation will please all guests. This summer salad is a perfect combination of juicy fresh vegetables, boiled chicken breast and tender egg pancakes. And a dressing without mayonnaise will delight everyone who adheres to proper nutrition. Optionally, this salad can be seasoned with mayonnaise.
The "Kaleidoscope" salad turns out to be very tasty, healthy, satisfying and at the same time quite light. It is perfect for a family dinner.
Preparing a salad "Kaleidoscope" is simple, quick and from available products. In summer, in the season of fresh vegetables, I really like to cook it.
Try this light and delicious salad of vegetables and chicken fillet with an unusual serving. He, too, will not leave you indifferent.

Ingredients:

  • boiled chicken fillet - 350 g
  • canned corn - 1 can
  • cucumber - 2 pcs.
  • sweet pepper - 1 pc.
  • green onions - 1 bunch
  • eggs - 3 pcs.
  • milk - 50 ml

Sauce:

  • sour cream 20% - 5-6 tbsp. l.
  • garlic - 2 cloves
  • ground black pepper - to taste
  • salt to taste

Step by step recipe

1. First, let's prepare all the ingredients for the salad.
Cut 2 medium-sized cucumbers first lengthwise into plates, and then cut the plates into cubes.
Chop a bunch of green onions.

2. Take one large bell pepper and cut off the top and bottom of it. Cut out the seed box. First, cut the pulp of the pepper into strips. Then we cut these strips into cubes.

3. Cut 350 g of boiled chicken fillet into small pieces.

4. Break 3 eggs into a bowl. Pour in 50 ml of milk. Salt and pepper a little with black pepper. Mix everything until smooth.

5. Pour part of the egg mixture into a hot frying pan, slightly greased with vegetable oil. When one side is fried, turn over to the other side. Remove the finished pancake from the pan. Fry all egg pancakes using this method. From this amount of ingredients, I got 4 pancakes.

6. Cut the finished pancakes in half, fold and cut into strips again. Cut the resulting strips into small pieces.

7. We fold the salad.
We take a large dish and put the sliced ​​meat on it in a small sector. The diameter of my dish is 32 cm. Then we put the prepared eggs. Put the bell peppers next. Next are sliced ​​cucumbers. And last we spread one jar of canned corn. We correct all the ingredients with a fork. Put strips of green onions between them.

8. Cooking the sauce.
We take 5-6 cl. L. 20% sour cream and squeeze 2 cloves of garlic to it through a press. Salt to taste and pepper with black pepper. We mix everything.
Put the prepared sauce in the center of the salad.
The salad is ready to serve.
