Awesomely delicious eggplant salad appetizer is perfect for every day and a festive table. Such a flaky appetizer will definitely appeal to all eggplant lovers and not only. This appetizer salad perfectly combines the original taste and elegant appearance. For a summer holiday, this is the best option!
Fried eggplants go well with sautéed carrots, fresh tomatoes add juiciness to the dish, and a hint of garlic - spice. Preparing such a snack dish is not at all difficult and will not take much of your time.

If you also love eggplant dishes, then by all means try such a bright appetizer salad. It's incredibly simple and delicious!

Ingredients:

  • eggplant - 1 pc.
  • tomatoes - 3-4 pcs.
  • carrots - 2 pcs.
  • onion - 1 pc.
  • mayonnaise - 2-3 tbsp. l.
  • parsley - 1 bunch
  • garlic - 2 cloves
  • salt to taste
  • ground black pepper - to taste

Step by step recipe

1. First, let's prepare all the vegetables.
Cut one medium eggplant into slices about 5 mm thick.

2. Fry eggplant slices in a hot pan with a little vegetable oil. Fry on both sides until soft. If you have an eggplant variety that tastes bitter, then you first need to salt them and leave them for 15 minutes to drain the water, and then rinse them in running water.

3. Cut one onion into half rings.
Three medium carrots on a coarse grater.

4. Put chopped onion in a frying pan with a small amount of vegetable oil. Pass it until golden. Add prepared carrots to the onion. Saute for another 4-5 minutes until the carrots are soft. Optionally, cover the pan with a lid and simmer vegetables over low heat.
At the end, salt the vegetables to taste and pepper. Mix everything and remove from heat.

5. Cut 3-4 medium sized tomatoes into slices.
Finely chop a bunch of fresh parsley.

6. We take 2-3 tbsp. l. mayonnaise and squeeze 2 cloves of garlic to it through a press. We mix everything.
For convenience, put the mayonnaise into a pastry bag.

7. We fold the salad appetizer.
Put eggplant circles on the bottom of the dish. Salt the eggplants a little. We make a mesh of mayonnaise.

8. With the next layer, evenly spread the sautéed vegetables. Again we apply a mesh of mayonnaise.

9. Put prepared tomato circles on the carrots. We apply a net of mayonnaise.
Sprinkle everything on top with chopped parsley.
The dish is ready to serve.

Salad - the appetizer turned out to be very tasty and light. Eggplants go well with tomatoes and sauteed carrots with onions. And the spicy garlic taste gives this dish a special zest.
