Such a ZEBRA cake is prepared without baking, very simple and pretty fast. Everyone can handle it. This curd cake will be relevant at any time of the year, but it is especially good in the summer, when you don't want to stand at the stove for a long time. ZEBRA cake turns out to be so delicious and beautiful that it is suitable not only for home tea drinking, but also decorates the festive table.

Ingredients:
- shortbread cookies - 200 g
- butter - 150 g
- cottage cheese - 400 g
- sour cream 20% - 400 ml
- sugar - 200 g
- dark chocolate - 100 g
- cream 10% - 80 ml
- gelatin - 30 g
- water - 100 ml
Step by step recipe
1. Pour 30 g of gelatin in an iron bowl and pour 100 ml of water here.
Mix the gelatin with water well and leave to swell for about 15-20 minutes.
2. While the gelatin swells, we will make the base for the cake. Break 200 g of shortbread cookies into small pieces and put in a grinder. Grind all cookies into small crumbs.
3. Transfer 150 g of butter to a saucepan and melt over low heat.
4. Pour the melted butter to the chopped liver. Mix everything until a homogeneous mixture is obtained.
5. Cover the bottom of the baking dish with parchment paper. The diameter of my mold is 20 cm. Pour the prepared crumb for the base on the bottom of the mold. Distribute it evenly over the bottom of the mold and tamp it a little with a spoon. We put the form with the base for the cake in the refrigerator.
6. Let's make curd cream. Pour 400 g of cottage cheese into a chopper. Add 200 g of sugar and 400 g of sour cream to this. Grind the curd mass until smooth. If there is no chopper, you can grind the curd through a sieve or chop with an immersion blender.
7. Now let's prepare the chocolate mixture, take 100 g of chocolate and add 80 ml of cream with 10% fat to it. I melt the chocolate in the microwave in pulses of 10 seconds, stirring each time. Chocolate should not be overheated, its temperature should be about 40 degrees. Stir until the chocolate mass is completely homogeneous.
8. By this time, gelatin has already swollen, we melt it over low heat, stirring constantly. As soon as all the gelatin has melted, remove it from the heat.
9. Pour the melted gelatin into the crushed curd mixture and mix well.
10. Divide the prepared cream into two, approximately equal parts.
11. One part will remain white, and in the second add melted chocolate with cream and mix well.
12. We take out the already cooled sand base from the refrigerator and pour the prepared curd mass onto it, alternating colors until it ends. Since I got more chocolate mass, I pour it out in 6 tbsp. l., and white 5 tbsp. l. The mass must be poured very carefully and clearly into the center of the mold.
13. When all the curd mass has been poured into a mold, carefully make a pattern on top with a toothpick. To do this, we carry out a toothpick from the edge of the cake to the center, wiping it each time.
Set the prepared cake to freeze in the refrigerator for about 4 hours.
14. The cake is frozen, we take it out of the mold. In order for it to come out of shape well, warm up the sides a little with a hairdryer. Carefully open the baking dish and take out the cake.
The cake turned out to be beautiful in the context of a delicate curd soufflé and a delicious sandy base. It will not be difficult to prepare such a cake, and the result is always amazingly tasty and beautiful.
