Not a piece or a bone in the freezer? Let's cook cabbage soup without them! Meat is not needed here, but fragrant and rich cabbage soup will turn out 100%. We promise!

Ingredients:

fresh cabbage
potato
onion
carrot
vegetable oil
flour
salt
black peppercorns
Bay leaf
greens
tomato paste

How to cook:

1. Wash and peel the potatoes. For a 3 liter pot of cabbage soup, you will need 3-6 medium potatoes.

Cut them into cubes, pour the required amount of water and put on fire. After boiling, remove the foam and continue cooking over a lower heat.

2. Chop the cabbage into large strips or even pieces if it is young. A medium fork is enough, about 0.5-0.7 kg.

3. Stew the cabbage in vegetable oil. You do not need to fry it, like for a pie filling, and it is also not worth stewing for a long time. It takes 10-15 minutes for it to grab onto and nourish itself with oil.

4. Transfer the cabbage to the potatoes. Top up with water if necessary. Simmer under the lid.

5. Prepare a diced roast of grated carrots and onions. About 1 carrot and one onion is enough.

6. Add 1-1.5 tbsp to the frying. l. good tomato paste, simmer for a couple of minutes. You can pour a little water from a pot of vegetables. Transfer the dressing to the soup.

7. Fry the flour separately and put it in the broth very quickly. Pain in the eye. But no more than 1 tbsp. l. It is needed for satiety and richness of the broth, since it is not meat or fish.

Important! Other ingredients can be added to these cabbage soup - tomatoes, bell peppers, eggplants, boiled mushrooms, boiled or canned beans. The article provides a basic recipe that can be turned into many different lean cabbage soup options without meat.

8. Salt cabbage soup and season with peppercorns and bay leaves to taste.

As the potatoes and cabbage are ready - the cabbage soup can be served. Don't forget the greens!
