I always have rustic fresh cottage cheese in the freezer, I never buy it in the store. Fresh cottage cheese is not eaten at my house, but baked goods are with great pleasure. Today I will share with you a recipe for mini donuts, which I learned from my grandmother, and she, in turn, from her mother-in-law.
I use, as I have already announced, rustic cottage cheese, I defrost it in the refrigerator. The cottage cheese should not be very liquid or dry, I knead it with a fork and start making the dough.
This time I had 500 grams of cottage cheese, to which I add 2 eggs, not a full teaspoon of soda, a pinch of salt, 3 tablespoons of sugar. I mix everything and start adding flour in portions. It took me 9 tablespoons of flour with a small slide. The dough does not need to be heavily hammered with flour, it should stick to your hands.
In order to form "koloboks" I grease my hands with vegetable oil and pinch off a little dough, roll it into a ball.
Now all the balls need to be rolled in semolina, I entrust this business to my main kitchen assistant - my daughter. She does a great job, but I still have time to clear the dirty dishes from the table.
When all the "balls" are ready, you can start frying them.
For frying, I use vegetable oil, heat it over medium heat. I fry all the donuts in it until golden brown.
Frying several pieces takes about 5-6 minutes.

- Soda 1 teaspoon (not full)
- Sugar 3 tablespoons
- A pinch of salt
- Flour 9-12 tablespoons
- Flour 2-3 tablespoons
