No tricks - because everything is really very simple. Any housewife can cook in any kitchen. And it will be delicious! I have many recipes for squash caviar for the winter. But almost all of them are with the addition of mayonnaise and almost everywhere you need a hand blender. And what if there is no blender...

HOW TO COOK:

Zucchini is well washed and chopped with a meat grinder. If suddenly there is no meat grinder at hand, you can grate it on a fine grater. But of course, with a meat grinder it turns out faster.

I drain the excess juice - it will not come in handy. You do not need to squeeze the zucchini, it is enough to drain the juice that has already been released!

I also pass onions and carrots through a meat grinder. Or, again, you can use a fine grater.

I cut the tomatoes in half and grate them. It's very convenient - no juicer needed. The peel remains in my hands (I, of course, throw it away), and in the plate - tomato juice with pulp.

In a saucepan with a thick bottom, I heat the vegetable oil. And pour in tomato juice. I immediately add salt and sugar here. I boil for about 10 minutes over low heat. I'm stirring, of course.

Then I increase the heat a little, add the carrots - and again for 10 minutes. After the carrots, add the onion. And again, stirring, the carcass for about 10 minutes.

Now zucchini. I do not cover the pan tightly. You can stew with the lid open - then the caviar will be thicker. I stew with the lid ajar for about half an hour.

While the vegetables are stewing, I sterilize the jars and lids. How I do it (several methods of sterilization), I have already told HERE.

After half an hour, pour in vinegar and add hot pepper. If you do not like spicy, pepper, of course, you can not add.

Carcass for another 7-10 minutes and spread the caviar in sterilized jars. I close, turn over the cans and wrap them until they cool completely.

And that's it! Such caviar is stored even in the kitchen cabinet. Delicious and hassle-free!

From the following amount of ingredients, approximately 2.2 liters of ready-made caviar is obtained. The caviar, of course, can be interrupted with a blender until smooth, but after that it must be boiled for at least 5 minutes, and only then rolled up.

RECIPE:

• Zucchini - 2 kg
• Carrots - 500 g
• Onions - 500 g
• Tomatoes - 600 g
• Hot pepper - 1 pc.
• Vegetable oil - 80-100 ml
• Sugar - 4 tablespoons.
• Vinegar 9% - 60 ml (4 tablespoons)
• Salt - 0.5 tbsp.
