Remember how we all waited for fresh vegetables in the spring: tomatoes, peppers and cucumbers. And the first salad with them was the most delicious. Now there are enough fresh vegetables and at affordable prices, and such salads are a little fed up and you want something interesting and unusual.
For the last week I have been preparing a spicy salad with avocado and beets, well, very tasty. I bake the young beets in the oven, wrap each root vegetable in foil and send it to the oven to bake at 190 degrees for about 1 hour, then let it cool in the foil the same way.
I cut the cooled beets into small cubes and send them to the salad bowl.
Next, peel the avocado and cut into the same cubes.
By the way, if you bought a not very ripe avocado, you can "ripen" it by sending it to a paper bag along with an apple and in a couple of days it will become soft and ripe.
Next, I send the Sirtaki cheese to the salad, cut it into the same cubes and put it on top of the avocado. Now it remains to prepare the dressing.
To do this, I mix 4 tablespoons of vegetable oil and 2 tablespoons of lemon juice, do not add salt. I dress the salad, sprinkle it with a little freshly ground pepper on top and serve it to the table. It is better to stir it before serving.
You urgently need to prepare this salad, because it is very, very tasty, be sure to cook it.
