A nourishing summer vegetable salad that will go well with kebabs, and on a festive table or just for dinner. This is a really delicious salad, I recommend it.

Recipe:
eggplant -2 pcs
cucumbers -2 pcs
potatoes -3 pcs
bulgarian pepper -1pc
tomatoes -1pc
green dill - to taste
salt to taste
black pepper - to taste
vegetable oil - to taste
COOKING METHOD
Cut 2 medium eggplants into strips, peel 3 medium potato tubers and cut into thin strips.
Pour a little vegetable oil into the pan, put the eggplants and fry until tender, at the end of cooking season with salt and pepper.
Simultaneously with the eggplant, fry the potatoes until golden brown in small portions.
Cut fresh cucumber 2 pieces into strips, cut Bulgarian pepper into strips and cut the tomatoes.
We collect the salad.
First put eggplants in a rectangular salad bowl, then cucumbers, bell peppers, fried potatoes, cucumbers and tomatoes.
If a round salad bowl needs to be laid out in sectors, the order is arbitrary, as you like.
Chop the dill and sprinkle on the salad.
When serving, add some salt to the salad, pour over with vegetable oil and stir.
It turns out very tasty, satisfying and most importantly does not get bored, you can cook all summer.
