Preparing such a cake is surprisingly simple, fast enough and you don't even have to turn on the oven. This is a great option for a beautiful and delicious cake without baking for a festive table. And you can just pamper yourself and your loved ones with such a cake. After all, all products are simple and affordable, and the recipe is not complicated at all.

Ingredients:

  • shortbread cookies - 200 g
  • strawberries - 1 kg
  • tubes - 600 g
  • cottage cheese - 500 g
  • sour cream 20% - 350 ml
  • sugar - 350 g
  • vanilla sugar - 10 g
  • gelatin - 30 g
  • water - 100 g

Step by step recipe

1. Soak the gelatin first.
Pour 30 g of gelatin into an iron bowl and pour 100 ml of water here.
Mix the gelatin with water well and leave to swell for about 15-20 minutes.

2. Making curd cream. I grind the curd mixture in 2 approaches, since everything does not fit at one time. In total, you will need 500 g of cottage cheese, 350 ml of sour cream, 350 g of sugar and 10 g of vanilla sugar. Grind everything until smooth. Transfer the curd mixture to a separate bowl.

3. Cut approximately 300 g of strawberries into slices.

4. We are preparing the form in which we will fold the cake. I took the culinary ring and set the size to 18 cm. I use cling film as the bottom. To make the film stick well to the ring, I moisten it a little with water. We put the ring on a flat surface.

5. Melt the swollen gelatin constantly stirring over low heat up to about 70 degrees.

6. Pour the melted gelatin into the curd mixture and mix. The curd mixture should be at room temperature.

7. Fold the cake in layers. First, pour a little curd cream on the bottom. Put a layer of shortbread on it. In total, you will need about 200 g of cookies.

8. Fill it with a small layer of cream and lay out half of the chopped strawberries. Fill with cream again.

9. And again we repeat: cookies, cream, strawberries, cream, cookies and cream.
Cover the assembled cake with cling film and refrigerate for at least 4 hours.

10. Take out the frozen cake from the mold, for this we draw a knife along the edge of the mold, separating the cake.
We rearrange the cake on the dish.

11. Decorate the sides of the cake with wafer rolls. Cut the tubes so that they are slightly higher than the cake. For a cake with a diameter of 18 cm, I needed 600 g of wafer rolls.
Glue the tubes to the sides of the cake.

12. In order to prevent the tubes from accidentally falling and for beauty, we tie the cake with a red satin ribbon.
Decorate the top of the cake with washed strawberries. It took 700 g of strawberries to decorate the cake. I did not cut the tails of the strawberries for beauty, you can do it at your discretion.

The strawberry curd cake turned out to be very tender and with a pleasant creamy berry taste. This dessert will undoubtedly become your favorite of the strawberry season.
