It is high in protein and fiber, but low in fat. It is vitamin-rich and full of beneficial micronutrients. This salad is perfect as a full-fledged light dinner or snack. And it can also be served on a festive table - it is bright, very tasty and, for sure, guests will also appreciate it.
It perfectly combines tomatoes, broccoli and canned chickpeas with chunks of tuna. And an unusual dressing based on olive oil with the addition of lemon juice adds brightness to the taste.
Preparing such a salad with tuna and vegetables is quick and very simple. Be sure to try this salad with tuna and chickpeas and you will be surprised how delicious it is!
Ingredients:
- broccoli - 200 g
- canned chickpeas - 200 g
- canned tuna - 1 can (180 g)
- cherry tomatoes - 150 g
- parsley - 1 bunch
- capers - 2 tbsp l.
- vegetable oil - 2 tbsp. l.
- apple cider vinegar (lemon juice) - 1 tbsp. l.
- salt to taste
Step by step recipe
1. First, let's prepare the ingredients.
200 g of my broccoli cabbage and cut into small inflorescences. Put the prepared cabbage in a bowl and pour boiling water over it. Let it brew for about 3-4 minutes.
2. After 4 minutes, drain the hot water from the broccoli and immediately pour over the cabbage with cold water. This is to keep the broccoli a beautiful green color.
3. Cut 150 g cherry tomatoes in half.
Finely chop a small bunch of parsley.
4. Knead one 180 g jar of canned tuna with a fork.
5. Put prepared broccoli inflorescences, 200 g of canned chickpeas, 2 tbsp. l. capers, chopped tomatoes, canned tuna and parsley.
Salt a little, do not forget that the capers and tuna are already salted, add 1 tbsp. apple cider vinegar or lemon juice and season with about 2 tablespoons. vegetable oil.
Mix everything gently. Canned chickpeas can be substituted for boiled chickpeas or white beans.
The salad with tuna and vegetables turned out to be delicious. It harmoniously combines vegetables with salted capers and tuna. Try to make such a salad, I really liked it.
