Sun-dried tomatoes for the winter: an easy way to prepare in the oven

Let's make sun-dried tomatoes for future use, with our own hands and in our kitchen. This wonderful appetizer is budgetary and very easy to prepare, which means that everyone will definitely succeed!

Sun-dried tomatoes are used in appetizers, salads, sandwiches and baked goods. For example, in pizza. Or served on their own on a large plate.

Ingredients:

1.5 kg of tomatoes
3 tbsp. l. mixtures of herbs (basil, thyme, rosemary, mixture of Provencal or Italian herbs)
1 head of garlic
0.5 cups olive oil
2 pinches of salt
foil or parchment
jar with lid

How to cook:

1. Important! Tomatoes are needed with dense pulp. Like fingers, cream, tight cherry or large, hard fruits. Watery and fleshy ones will not work.
Wash each tomato by hand and pat dry with a paper towel.

2. Cut the tomatoes into slices or halves. Can be cut into strips or slices.

3. Line a baking sheet with foil or baking paper, brush with olive oil.

4. Turn on the oven and preheat to 220-240 degrees.

5. Lay the tomatoes in dense rows on a baking sheet, or rather on paper in it or foil. Densely packed tomatoes will become much smaller during the drying process!

6. Sprinkle with salt and herbs.

7. Brush or drizzle over the tomatoes with olive oil.

8. Place the baking sheet in a preheated oven for 30 minutes, turn on the convection or open the door if it is not convection.

9. After 30 minutes, reduce the heat of the oven to 140-160 degrees. If your oven does not go below 160 degrees, open it slightly so that the tomatoes do not dry out.

Continue drying tomatoes for another 1.5 hours.

10. Cut the peeled garlic cloves into thin slices.

Separately heat the olive oil in a frying pan or bowl for pouring ready-made sun-dried tomatoes. But don't boil!

11. In a prepared clean, dry jar, place spicy herbs and a little garlic on the bottom.

12. Place sun-dried tomatoes, herbs and garlic in layers.

13. Pour hot oil over everything so that it covers the tomatoes, screw the lid tightly and turn the jar upside down. Wrap up until it cools completely.

Store sun-dried tomatoes in a cool, dark place. If the lid is plastic, then keep such jars only in the refrigerator.
