Oh, and delicious eggplants are obtained! Simply delicious! This is an ideal appetizer that is suitable for dinner, and on a festive table, and for barbecue in nature - in general, very tasty! And most importantly, this is a simple recipe, and you definitely have all the ingredients at home.

Ingredients:

Eggplant
Onion
Carrot
Bulgarian pepper
Greens
Salt
Vinegar
Sugar
Spices
Vegetable oil

Attention: Recipes contain ingredients per kilogram of eggplant. You can easily reduce or increase the proportions if necessary.

So, my eggplants, cut into slices about 1 cm thick. We spread it on a baking sheet covered with paper. Grease each eggplant with vegetable oil on top. You don't need a lot of oil, just a little. Sprinkle salt on top to taste, you can add a few of your favorite spices. I usually have it just black ground pepper.

We send it to an oven preheated to 180 degrees for 20 minutes. In the meantime, we will deal with other ingredients.

Heat some vegetable oil in a frying pan and fry one onion, cut into half rings. As soon as the onion becomes translucent, add the grated carrots (1 pc), fry for 2-3 minutes and add one bell pepper, chop it into strips.

Salt to taste, simmer vegetables for a few more minutes. Then we add a bunch of greens - parsley seems to me just perfect here, as well as 3-4 cloves of garlic. We rub it on the finest grater or squeeze it through a press. If you like spicy, then you can additionally chop the hot pepper. Stir and turn off the stove.

As soon as the eggplants are ready, we collect our appetizer. We take a deep plate or jar, put the eggplants on the bottom, distribute some fried vegetables on top. Then again eggplants and more vegetables. And so we alternate until the ingredients run out.

Fill with marinade. For the marinade, mix 2 tablespoons of water, 2 tablespoons of apple cider vinegar and 2 tablespoons of sugar. Stir until the sugar dissolves and pour in the eggplant.

Cover the top with cling film or a lid and put it in the refrigerator for 4-6 hours, preferably overnight. Well, that's it, the perfect eggplant appetizer is ready. Very tasty, be sure to try!
