Delicious and fragrant honey cake for a holiday in an unusual design. The unusual cut of this cake is amazing. And the taste is still the same: delicate, rich, with a subtle honey aroma. Sour cream with poppy seeds is ideal for this cake. It perfectly balances the taste of honey cakes. However, you don't need to add poppy.
This version of the honey cake is especially for those who do not want to waste time rolling out the cakes. Its recipe is so simplified that it will take you no more than 30-40 minutes to cook. The whole secret is that we will not roll out the cakes, but simply roll up small balls of dough and bake them.
Everyone can cope with the preparation of this version of a honey cake without cake layers. I strongly advise you to roll the balls as small as possible, then they will be perfectly soaked in cream and the cake will not be dry.
You can decorate the cake to your liking. And according to this recipe, you can bake a classic honey cake with rolling cakes.

Ingredients:

Dough:

  • flour - 500 g
  • eggs - 2 pcs.
  • honey - 1/2 cup
  • sugar - 100 g (1/2 cup)
  • soda - 1 tsp l. without slide

Cream:

  • sour cream 20% - 500 ml
  • butter - 250 g
  • boiled condensed milk - 1 can
  • poppy - 1 tbsp. l.

Decoration:

  • coconut flakes - 50 g
  • cranberry

Step by step recipe

Prepare the dough

1. First, let's knead the cake dough ..
Pour 100 g of sugar into a bowl and add half a glass of honey to it. We put everything on a steam bath, the bottom of the bowl should not touch the water. Continuously stirring, heat the mixture until all the sugar dissolves.

2. Once the sugar has dissolved, remove the bowl from the steam bath.
Pour 1 tsp into this mixture. without a slide of soda. Mix well. The soda and honey will react and foam.

3. Here we break 2 eggs one at a time, be sure to mix after each.

4. Gradually add about 500 g of flour to the dough. Since the flour is different for everyone, it may need less or more. Mix the dough first with a spoon and then with your hands. You should get a soft, pliable and slightly sticky dough.

5. Cover the bowl with the dough with cling film and leave to infuse for about 1 hour at room temperature.

6. An hour passed, the dough was already infused. We take a little dough and roll balls out of it. The size of the balls is about the size of a quail egg. The smaller the balls, the better they will be soaked in the cream. Put all the balls on a baking sheet covered with parchment paper. I got 1.5 trays of balls. The size of my baking sheet is 32 x 43 cm.

7. We put everything in the oven preheated to 180 degrees. We bake on the top + bottom mode for about 8 -10 minutes. Be careful not to overdry the balls.
The balls are baked, leave them to cool.

Cooking cream

8. Preparing the cream for the cake.
Put 250 g of butter at room temperature in a bowl and beat with a mixer for about 2-3 minutes until white. Be sure to use butter, not spread.

9. Add 1 can of boiled condensed milk to the whipped butter. Beat everything again.

10. Add 500 ml of sour cream at room temperature and 1 tablespoon to the cream. poppy. Stir the cream for a short time. All ingredients should be at room temperature, otherwise the cream may exfoliate.
The cream is ready, we collect the cake.

We fold the cake

11. Line a large bowl with cling film. I have a 4L bowl. Put the cream in the first layer.

12. Put a layer of balls on the cream. Put a layer of cream again.

13. And then the balls. So we fold the cake until all the ingredients are gone.
Align the cake on top with a spoon, slightly pressing the balls down to make an even bottom.

14. We cover the cake with cling film and put in the refrigerator to infuse for at least the whole night, or better for a day.

15. The cake froze and soaked. We remove the cling film from above, and pull the film a little on the sides to detach it from the bowl. Cover the bowl with a dish and turn over. We remove the film.

16. Sprinkle the cake with coconut on top, imitating snow. We also decorate the cake with cranberries on top and on the sides. If desired, the cake can be sprinkled with grated chocolate or covered with chocolate icing.
