Remember, in the cartoon "Little Devil with a Fluffy Tail" there was such a phrase:
- Leg of lamb, how dear you are to us!
So, I propose today to rephrase it, replace the lamb with the pork. It will be dear to our stomach, and very affordable for our wallet. Because the knuckle is not at all prohibitively worth it.
And to cook it deliciously - there are many ways. Today is one of them.
We take:
- A couple of small pork knuckles (or one, depending on your appetite)
- A couple of bay leaves
- A tablespoon of juniper berries (as small as possible)
- A teaspoon of peppercorns
- Onion
- Cumin and salt to taste
How we cook:
And here is the most beautiful thing. Cooking such a shank is as easy as shelling pears.
We take a saucepan, pour into it as much water as our shanks will cover.
We throw in there juniper, pepper, onion right in the scales. Bring to a boil and send the shanks to boiling water. Cook for an hour and a half over low heat so that the water does not boil away.
Before the end of the hour and a half, throw in the bay leaf.
We take out the knuckles from the broth, let them cool down a little. cut the skin crosswise, rub with salt and caraway seeds.
We send them to the wire rack in the oven - for another hour and a half at a temperature of 200 degrees. We get a tender tasty shank ...
