Not a single plum disappears from me. This year we have an excellent harvest of plums at our dacha! Therefore, this year I prepared a little more adjika than usual. But this seasoning has never remained with us until spring. We really like it. And for meat, and for poultry, and for fish, and for vegetables. Delicious with pasta. I add this sauce to casseroles and marinades. And just delicious with bread. Sour-sweet-spicy-salty-aromatic!

HOW TO COOK:

I wash the plums well and put them in a saucepan with boiling water. When all the plums are already in the pot, the water will of course stop boiling.

Bring it to a boil again. As soon as the water boils, I immediately take out the plums. No need to cook.

Let the plums cool down a bit. At this time, I will prepare the pepper and garlic. Cut into convenient pieces and grind in a meat grinder. We love the hotter seasoning, so I definitely add red hot peppers. But here to taste! You can just take sweet peppers if you don't eat hot ones. But garlic is a must here! It’s not right without him! Add as per recipe.

Grind the plums through a sieve to make a plum puree. This is not at all difficult to do.

I put the finished puree on the stove. Add chopped pepper and garlic. This also includes sugar, salt and the "khmeli-suneli" seasoning. The seasoning, of course, needs to be chosen so that you like it. For some reason, different manufacturers have a different flavor. But the composition is about the same. It is not so tasty without seasoning. It gives a special taste and aroma. Therefore, I highly recommend adding it!

Stir everything well and bring to a boil. I cook for about 20 minutes over medium heat.

You can simply store such jars in the kitchen cabinet. Perfectly stored as needed. We have a maximum until December)) Could have been more, probably, but we eat them earlier. Try it - delicious!
