Spicy eggplant appetizer with cream cheese

While eggplants are cheap, I cook my favorite dishes from them: 6 original recipes

Ingredients: beggplants 3 pcs, onion 1 pc, garlic 2-3 cloves, salt, pepper to taste, melted cheese 200 grams

How to cook: Peel the eggplants, cut into cubes, salt and pepper, bake at 180 degrees until tender. Fry onions until tender, but do not bring until golden brown. Send ready-made eggplants to the onion in a frying pan, add cream cheese, mix well and heat. It can be served both warm and cold.

Egoist salad

Ingredients: eggplant 2 pcs, chicken breast 1 pc, bell pepper 1 pc, tomatoes 3-4 pcs, red onion 1 pc, sour cream + mustard (mayonnaise) for dressing

How to cook: Bake the whole eggplants with a knife in several places, then cool, peel and cut into cubes. Cut the onion into half rings and pickle in vinegar or lemon juice.

Cut the chicken breast into thin thin layers, season with salt, pepper and fry in a pan until golden brown, then cut into small pieces. Chop the tomatoes and peppers. Combine all ingredients in a salad bowl, season and serve.

Eggplant salad with beef and bell pepper

Ingredients: eggplant 2 pieces of medium size, bell pepper 1 piece, onion 1 piece (large), boiled meat 200-250 grams, herbs, dry garlic, black pepper and salt to taste, mayonnaise or sour cream with mustard for dressing

How to cook: Cut the onion into quarters into rings and fry in vegetable oil. Cut the eggplants into cubes and fry in the same pan with the addition of salt and dry garlic, disassemble the boiled meat into fibers. Cut the pepper into strips. Mix everything in a salad bowl, season with mayonnaise or sour cream mixed with mustard.

Armenian salad

Ingredients: eggplant 3 pcs, red onion 1 pc, pomegranate seeds, cheese "Sirtaki" 150 - 200 grams, vegetable oil for dressing, parsley or cilantro

How to cook: Cut the eggplant into plates and fry in vegetable oil until tender, then cut into strips. Cut the onion into half rings and marinate in vinegar mixed with water in equal proportions. Cut the cheese into cubes, peel the pomegranate. Season the eggplants, onions, herbs and pomegranate grains with olive oil, top with slices of cheese.
