I take two eggplants, two beets and an onion. It may seem like these vegetables don't go together. But I highly recommend giving it a try. It turns out an unusual and delicious dinner for the whole family. Everything is very fast and simple. You can cook in any kitchen. And it will be delicious!
HOW TO COOK:
Peel the eggplants and cut into cubes. You can add salt and leave for 15-20 minutes if you are afraid that they will taste bitter. But you don't need to do this (personally, I sometimes skip this step), because eggplants, which are bitter, are now practically not found. Or maybe I'm so lucky ...
By the way, write in the comments, do you salt the eggplant before adding it to the dish?
Chop the onion finely and fry in a little vegetable oil for a couple of minutes. Then I add the prepared eggplants to the pan.
And immediately I send the beets grated on a coarse grater to the vegetables. I stir, salt, add black pepper and simmer all together under a lid for about 15 minutes. If you like spicy, you can add red hot pepper to taste.
After 15 minutes, be sure to add 1-2 cloves of garlic through a press and chopped herbs. I love this kind of caviar with dill and parsley. But you can take any greens, of course.
I stir it all over again and simmer for another minute or two. And that's all. You can serve.
When I first paired eggplant with beets, I was a little hesitant. But I really liked it! And now this dish is always "with me". Delicious with a slice of bread. It would seem that they are ordinary products, but the dish turns out to be unusual. And delicious, really!
