Vegetables on skewers in the oven are a bright dish that will brighten up your lunch or dinner. Such kebabs from vegetables are tasty, aromatic and healthy. They are ideal for any meat dish as a side dish.
You can also add medium-sized mushrooms and chopped onions to vegetables.
Such vegetable kebabs can be prepared for every day, or you can serve them on the festive table. Their spectacular look will appeal to all guests. Ingredients:
- young corn - 2 ears
- eggplant - 2 pcs.
- zucchini - 2 pcs.
- pepper - 1 pc.
- cherry tomatoes - 300 g
Marinade:
- vegetable oil - 4 tbsp. l.
- apple cider vinegar (lemon juice) - 2 tbsp l.
- dry garlic - 1 tbsp. l.
- Italian herbs (seasoning) - 1 tbsp. l.
- salt - 1/3 tbsp. l.
- ground black pepper - 1/2 tsp l.
Step by step recipe
1. First, let's prepare the vegetables.
Cut two ears of corn into small circles. It is advisable to take young maize of milk ripeness.
We also cut two even, small in diameter eggplants into thick circles.
2. Cut two young zucchini into slices.
Take one sweet fleshy pepper and cut off the top and bottom of it. Cut out the middle with the seeds.
Cut the pepper into wide strips. Cut the resulting strips across again to make smaller pieces.
3. Put eggplants, zucchini, peppers, chopped corn cobs, and 300 g cherry tomatoes in a large bowl.
4. Cooking the marinade.
Pour 4 tablespoons into a bowl. vegetable oil, 2 tbsp. apple cider vinegar or lemon juice, 1 tsp. l. granulated garlic, 1 tablespoon Italian herbs, about the 3rd part of Art. l. salt, and add 0.5 tsp. l. ground black pepper. We mix everything.
5. Pour all the vegetables on top with the prepared marinade. Stir so that the marinade is distributed over all vegetables. Leave to marinate for 15 minutes.
6. Cooking kebabs.
On a long bamboo stick, prick a circle of eggplant, corn, a slice of pepper, zucchini, tomato, and again eggplant, corn, pepper, zucchini and tomato.
Using this method, we prepare all the kebabs.
Transfer the prepared kebabs to a baking dish. Place so that the vegetables do not touch the bottom of the mold.
7. We put everything in the oven preheated to 180 degrees. We bake for about 40 minutes.
