The cucumbers are crispy, spicy, while "fresh" - well, just fly away! I cook them every year, and always a little, because we eat them instantly. Cook this year and you will love it - that's for sure. Most importantly, the recipe is incredibly simple.
Ingredients:
cucumbers
bulb onions
garlic
dill
salt
sugar
vinegar
The proportions in this recipe are 3 kg of cucumbers. If you need to cook more or less salad, then adjust the amount of ingredients based on how many cucumbers you take.
So, let's take small cucumbers. Large and overripe will not work - it will not work out very well. Therefore, we choose young cucumbers. We wash them, wipe them off and cut them into circles about 1 cm thick.
Shred 2 onions into thin half rings, finely chop a bunch of dill. We also need 200 grams of garlic. If you want something a little bit sharper, then you can take 250, but not less than 200! I usually weigh the garlic so as not to be mistaken. But as practice shows, these are 4-5 heads of garlic.
Pass the garlic through a press or chop with a blender, you can also chop it with a knife. The main thing is that the garlic is well chopped.
Now add 1 glass of sugar, 4 tablespoons of salt and pour in 150 ml of 9% vinegar. Mix everything thoroughly and put it in the refrigerator for 5-8 hours, you can overnight. Don't be confused by one glass of sugar, it's not much. There is a little sweetish aftertaste, but in combination with vinegar and the pungency of garlic and onions, it is very tasty!
We prepare jars: they must be sterilized, but at the same time, so that they are dry and hot. The most convenient way to do this is in the microwave or oven.
We spread the salad on dry hot jars and immediately roll it up. As you can see, there is no heat treatment here. The preservative is vinegar with salt and sugar. Well, garlic also prevents the salad from souring, as it kills bacteria.
The salad is ready in 12 hours - it's impossible to come off! If you open the jar in winter, the cucumbers will be as fresh! Very tasty, try to cook))) Bon appetit, friends!
