Eggplants in Georgian style. Filling for eggplant rolls. This is one of my favorite Georgian dishes.

Recipe:
eggplant -3-4pcs (1kg)
walnuts - 100g
garlic -3 tooth
mayonnaise to taste
water -1-2 tbsp.
cilantro greens - to taste
For homemade mayonnaise:
milk -50 ml
vegetable oil -100ml
salt -1 / 4 tsp.
mustard -1 / 3 tsp
lemon juice -1 tsp,
COOKING METHOD
And so we take 3-4 eggplants, cut into plates. Pour cold water into a bowl, add 1 tbsp. salt and put the eggplants here, leave for 20 minutes.
Let's start preparing the filling, grind 100 grams of walnuts with a blender.
now add 3 garlic cloves passed through a garlic press, finely chop the cilantro greens and add to the nuts.
If you don't like mayonnaise, you can add hot water to the mass and stir, I add a little mayonnaise, I have homemade mayonnaise.
pour 50 ml of milk and 100 ml of vegetable oil into a jar, lower the blender and beat until thickened. Butter and milk should be at the same temperature.
Now add salt, mustard and lemon juice, break through again, the mayonnaise is ready.
Mix the mass and add a little water, try adding salt if necessary, the filling is ready.
We take out the eggplants on a paper towel.
Now we fry in a pan, it is more convenient for me to do this in a grill pan, you can use a regular pan.
So we fry all the eggplants.
Now we take one plate of eggplant, put the filling on the edge and wrap the roll.
This is how we make all the rolls.
We serve to the table. It turns out very tasty, for my taste, walnuts and garlic are just the perfect combination.
