Ingredients:
- flour - 140 g
- cottage cheese - 100 g
- butter - 100 g
- lemon juice - 2 tbsp. l.
- eggs - 1 pc.
- salt - a pinch
Filling:
- apples - 400 g
- sugar - 130 g
- ground cinnamon - 1 tsp l.
Step by step recipe
1. First, let's prepare the dough.
Put 100 g of cottage cheese in a bowl. Add 100 g of soft, but not melted butter to this. Salt with a pinch of salt.
Mix everything until smooth.
You can take cottage cheese of any fat content.
2. Add 140 g of flour to this mass.
Since flour is different, do not add all the flour at once. Pour in gradually.
Knead the dough first with a spoon and then with your hands.
The dough should keep its shape well.
Collect the resulting dough into a lump and cover with a lid or cling film. We put in the refrigerator to infuse for about 30 minutes.
3. While the dough is infused, prepare the filling.
Cut 400 g of apples into quarters and peel them.
Three apples on a coarse grater.
Water the apples with about 2 tbsp. l. lemon juice. We mix everything.
Lemon juice gives apples a slight sourness and darkens a lot.
4. Here we add 130 g of sugar and 1 tsp to the apples. l. ground cinnamon. We mix everything.
The filling is ready. If desired, you can add raisins to it.
5. The dough lay for half an hour in the refrigerator, we cut it into 2 approximately equal parts.
Roll each part of the dough into a rectangular layer 3-4 mm thick.
Put half of the filling on the rolled dough. Distribute the filling evenly over the surface of the dough, not reaching the edge farthest from us by about 3 cm.
6. Roll the dough with the filling into a roll. It is best to roll the roll with a silicone mat and parchment paper.
We form the second roll in the same way.
We transfer the rolls to a baking sheet covered with parchment paper.
7. Break 1 egg and beat it with a fork.
Lubricate the rolls with a beaten egg on top.
We put the rolls in the oven preheated to 180 degrees. We bake for about 30 minutes.
8. Let the finished rolls cool and cut into portions.
Sprinkle with icing sugar on top and serve.
