Any girl in her youth at least once took a love story in her hands. And, perhaps, every second kept it in them, "Gone with the Wind" - the only work of Margaret Mitchell.

The writer's life was cut short early by a tragic accident, and she could not write anything else. But, thanks to the images of Scarlett O'Hara and Rhett Butler, born of the imagination of a “brave little woman,” as American critics called the writer, she was destined to live forever.

Her novel is about love and war, about loyalty, about cruelty, about betrayal and about the beauty of life itself. You come back to such books again and again, years pass, and your hand still reaches for the battered volume.

How do you describe this romance? He is defiant, cocky, romantic, real, playful, sad, patriotic, instructive, funny, exciting and very sad.

Reading it as if you were living that life for Scarlett.

Based on the book, a film was shot with the beautiful Vivien Leigh and the charismatic Clark Gable. They perfectly got used to their roles, so it is impossible to separate a real person from his image on the screen. Now Vivienne is Scarlett, and Clarke is always Rhett.

Morally, Scarlett O'Hara is not the most ideal human example. But if you think about it, then just the opposite, she is the very ideal of a woman-fighter.

The goodies in the novel - Melanie and Scarlett Ashley's love of life turn out to be disgraceful... none.

They are nice, well-mannered, intelligent, but all this does not prevent them from sitting on Scarlett's neck for years and surviving at the expense of her.

It is the immoral and impudent Scarlett O'Hara who saves them and protects them from hunger, from war and much more from what. Thanks to her father's legacy and Irish blood.

Scarlett is an incredibly strong person with powerful energy and a lust for life. She is a hero of her time. A business woman, a business woman with an iron grip, is forced to be tough when there is a war around and everyone is weak. And so she cannot be happy ...

She likes the infantile man, Ashley. And he loved her as strong as she was - Rhett. And this is her problem.

The whole novel, and the film, is tied to this struggle between two strong personalities - Scarlett and Rhett.

But how is Gone With the Wind connected to the culinary channel?

There is a lot of talk about food in the pages of this novel. The first thing that comes to mind is Scarlett's phrase: "I will never starve again!"

And what did they eat in the American South, and is there a local cuisine at all?

True culinary experts believe that American cuisine does not exist in nature, because it is not a kitchen at all, but an image of food, where the dishes are not so much pleasant to taste as they are convenient to eat. But this is not at all the case.

These are buns, corn pancakes, biscuits, waffles, melted butter for breakfast.
A platter of ham at one end of the table, a platter of fried chicken at the other, a stewed cabbage in a pot, heavily doused with sauce, mountains of beans on brightly colored earthenware, fried pumpkin, stewed okra, carrots in sour cream sauce and three desserts so everyone can select.

The O'Hara family and many of their neighbors were of Irish, French, German and British ancestry. Therefore, the culinary traditions in the American South were mixed. But also generously watered down by the "low" cuisine of black Africa.

It is interesting that the "slave" status easily penetrated the kitchen of the owners in the form of African tradition and hearty dishes.

Whatever they say, all together - this is the very cuisine of the “good old American South”. And we will try to cook pork leg following the recipes of the cook from Tara.

Ingredients:

2 kg pork ham
head of garlic
100 g coarse salt
2 tbsp. l. Sahara
1 hour l. ground black pepper
3 bay leaves
dry rosemary
juniper berries, if any
1 liter boiling water

How to cook:

1. Pour boiling water over half of the salt and all the spices. Add sugar. Stir so that the salt and sugar are completely dissolved.

2. Peel the garlic, cut the cloves lengthwise into 2-3 slices. Lash the meat with garlic, make cuts on top of the cells as desired.

3. Then rub the ham with the second half of the salt, wrap in a cloth and set for 30 minutes. Then transfer the meat to the cloth in a brine of salt and sugar. Place the dishes in the refrigerator and press down on the ham. Leave to salt for 2 days.

4. Remove salted meat from brine and cloth, dry with napkins and wrap in several layers of foil. Bake in the oven at 180 degrees for about 1.5-2 hours.

5. Remove the top of the foil and brown the ham until crusty.

Leave the meat to rest in foil for 30 minutes before serving. Then unfold completely, refrigerate and cut into slices.
