Beetroot salad with cheese and olive oil

Ingredients:

  • 2 medium beets
  • 100-150 gr. pickled cheese for salads (fetax, feta, feta cheese)
  • 1 clove of garlic
  • salt
  • pepper
  • olive oil
  • 2 h l. lemon or orange juice + a little grated zest
  • parsley

How to cook:

1. Beets for salads are always best baked. This can be done in the oven or microwave.

2. Cut the peeled chilled beets into equally beautiful cubes. Drizzle with lemon juice and salt to taste.

3. Also cut the cheese into neat cubes.

4. Chop the greens coarsely.

5. Pass the garlic through a press, grind with a spoon with a small amount of lemon or orange zest and ground black pepper. Pour in 2 tbsp. l. olive oil.

6. Put the beets in a salad bowl, top with cheese cubes, herbs and pour the dressing over everything. Stir on the table while serving.

A very unusual and tasty salad that will be useful to everyone, especially in winter. Beetroot dishes are not only a great dish for health, but they also easily return the blush to the cheeks of those who have lost it from the autumn weather. Checked.
