I am a great connoisseur of various appetizers, sometimes I even substitute them for the main dishes (for myself). The "Caucasian" pâté is exactly the one that boldly replaces a full-fledged lunch or dinner for me, because it is quite satisfying, has a rich taste, and it's a pleasure to cook it: it's quick and not difficult.

The basis of the pate is beans, you can take it canned in your own juice, or you can boil it without adding salt.

While the beans are cooking, you can prepare the rest of the ingredients. I cut one head of onion into cubes and fry it in vegetable until tender, you do not need to bring it to a golden color. During frying, I add black pepper and dry garlic to the onions.

Pre-soaked and dried in the oven, I grind walnuts into small crumbs using a blender. I soak the nuts for several hours with the addition of vinegar to get rid of the phytic acid from the nuts.

Next, I send beans and fried onions to the nuts, add a little vegetable oil and turn on the blender. The consistency of the pate can be adjusted to your taste, you can leave small pieces or grind into a smooth homogeneous mass (in this case, more oil may be needed). I choose the middle option.

Now the pate needs to be cooled to room temperature and served.

Ingredients:

  • Red beans 1 cup
  • Onion 1 pc
  • Garlic 2 cloves or a flat teaspoon dry
  • Walnuts 50-60 grams
  • Vegetable oil 2-3 tablespoons
  • Salt, pepper to taste
