The Monastyrskaya Izba cake made from pancakes is an unusual dessert, which is not a shame to serve on a festive table. Of course, such a dessert will be especially relevant during the Maslenitsa week. Indeed, this cake is based on thin pancakes stuffed with sweet and sour cherries and a lot of delicious sour cream. However, it is also perfect for a family celebration.
If not to say that this cake is made of pancakes, then no one would guess.
Making a Monastyrskaya Izba cake is not at all difficult, especially if you are good at baking thin pancakes. All that remains is to collect the dessert and wait until it is soaked. I highly recommend pre-weighing the sour cream for this cake so that it becomes thick. You can also use a sour cream or cream thickener.

Ingredients:

Pancakes

  • flour - 270 g
  • milk - 600 ml
  • eggs - 2 pcs.
  • sugar - 1/2 tsp l.
  • salt - 1/2 tsp l.

Sour cream

  • sour cream (at least 20% fat) - 500 ml
  • sugar - 150 g

Filling

  • canned cherries - 400 g
  • dark chocolate - 40 g (for decoration)

Step by step recipe

Cooking pancakes

1. First, let's prepare the pancakes. Break eggs into a bowl, add sugar and salt. Beat everything a little.

2. Add about 150 ml of milk to this and mix again.

3. Add flour to the mixture and mix until smooth.

4. Add the remaining milk to the resulting dough and mix completely. Be sure to let the dough brew for about 15 minutes.

5. Before frying the pancakes, add 2 tbsp to the dough. l. sunflower oil and mix well.

6. Fry the first pancake in a pan with a small amount of sunflower oil. Fry the rest of the pancakes in a dry frying pan over low heat.
Pour a ladle of dough into a preheated pan and distribute it by tilting the pan in different directions. As soon as the pancake is slightly fried on one side, turn it over to the other side. You do not need to fry pancakes too much.
To make the cake, we need 21 pancakes.

Cooking sour cream

7. Cooking sour cream. Put sour cream in a bowl and add sugar. We mix everything.

8. If the sour cream is liquid, it must be weighed. To do this, take cheesecloth folded 4 times, put it on a sieve and pour sour cream onto it. We are waiting for a couple of hours until the liquid drains.

We fold the cake

9. Place pitted cherries on one side of each pancake. We wrap the pancake with a tube. And so we fill all the pancakes.
I use canned cherries. If you use frozen cherries, then you must first defrost them, put them in a saucepan, pour half a glass of sugar. Cook after boiling for 1 minute.

10. We fold the cake immediately on a platter on which we will serve it on the table. Put 6 pancakes in the first row. Lubricate with cream.

11. In the second and subsequent rows we put one less pancake. We fold the cake so that we get a pyramid. Be sure to coat each row with cream.
Cover the entire cake with the remaining cream on top.

12. Decorate the cake with grated chocolate. Let the cake brew for about 2 hours and serve.

The Monastyrskaya Izba cake made from pancakes turned out to be very tasty, tender, soft and with a pleasant sour cherry. Be sure to cook it.
