Recipe for making salad without beetroot mayonnaise with apple and cheese. Perfect for today's dinner, and for the festive table.
It's great that one day I found this recipe in a cookbook. Since then I cook it regularly, especially in the cold season. This salad is served without mayonnaise, which makes it also safe for the figure.
The salad is quite light, but at the same time satisfying, rich not only in color, but also in taste. It is not a shame to serve such a salad and a guest.
First of all, you need to bake beets and potatoes in the oven in advance. Root vegetables need to be wrapped in foil and sent to an oven preheated to 180 degrees for 1 hour. The baking time will depend on the size of the vegetables.
Next, the beets and potatoes must be cooled without removing them from the foil, peeled and cut into small cubes.
In the same way, cut into cubes and a sweet tasty apple. If the apple is quickly darker, you can sprinkle it lightly with lemon juice. I do not peel off the peel. Light sourness will also add a little piquancy to the salad.
Next, you need to grind soft cheese, I use Adyghe cheese, I just knead it with a fork or cut it into small cubes, send it to a salad bowl. Adyghe cheese can be replaced with soft goat or sheep cheese, it will be very useful.
Green onions will add not only bright colors to our salad, but also piquancy. I cut it finely and sprinkle it on top.
As a dressing, I use vegetable oil, a little salt and freshly ground black pepper. Optionally, you can add some nuts such as almonds or pine nuts.
