1 secret:👉 Instead of kefir, we take fermented baked milk! Fermented baked milk should be at room temperature and by no means cold. The dough on fermented baked milk turns out to be much softer and without sourness.
Secret 2:👉 Add an egg at room temperature to the fermented baked milk, but only one yolk. Protein does not need to be added, it will make the dough rougher and the pies become stale.
Secret 3:👉 We add a little sugar to the dough, otherwise the pies will not be very fluffy. 1 teaspoon is enough.
Add salt and vegetable oil. Stir until smooth, I do it with a mixer. Fast and convenient.
Secret 4:👉 Add starch to the flour. Take any: potato or corn. The dough with starch will be more fluffy and the pies will not yet "tan" so much after cooling down.
Add the sifted flour with starch in parts to the fermented baked milk and knead the dough.
As it becomes difficult to stir with a spoon or mixer, sprinkle the table with flour and knead the dough with your hands.
Secret 5:👉 Stretching the dough and just now adding baking soda! It is important. You do not need to extinguish the soda with anything, otherwise you will not achieve such splendor in the pies.
We continue to knead the dough. It is not necessary to knead for a long time. Grease a deep bowl with a little vegetable oil, lay out the dough, cover with a towel. We prepare any filling. See my version of the filling in the video at the end of the article.
