We prepare delicious pies with vegetable filling in the Turkish way, as they are prepared in our Russian-Turkish family.

Yufkali kebab - unusual Turkish pastries or Sultan kebabı with vegetables

Ingredients:

stretched dough or filo
2 carrots
4 medium potatoes
1 head of onion
300 gr. champignons or other mushrooms
2 tomatoes
greens
green bell pepper
3 cloves of garlic
1 tbsp. l. tomato paste
salt
pepper
olive oil
egg yolk

How to cook:

1. This dough is now easy to buy at any store or to make at home. For example, like this exhaust will do. You can also take a simple thin pita bread if you haven't found any dough at all.

2. Wash and peel all vegetables, then cut into equal cubes. Chop the mushrooms, preferably pre-boil or fry.

3. In a saucepan, lightly fry the potatoes in oil, then add carrots, peppers, onions, garlic and tomatoes to it. Add salt and pepper to taste. Add your favorite spices.

Simmer until vegetables are ready. At the end, combine with mushrooms and herbs if desired.

4. Cut the dough into squares or rectangles, but not too large. Next, you need a portioned bowl.

5. Put a piece of dough into it, the edges should hang down. If the dough is homemade, then it does not need to be cut, but the long hanging edges must be cut off, leaving exactly to cover the filling.

6. Put the dough trimmings in a bowl on the already laid piece of dough, on top of the vegetable filling with mushrooms. Close it with hanging dough ends.

7. Beat the yolk with a pinch of salt.

Grease the dough folded onto the filling.

8. Cover the baking sheet with baking paper, you can oil it a little.

9. Turn the bowl of pie over the paper, as neatly as possible. Repeat the creation of Sultan's kebab pies in the same way with a bowl and yolks.

10. When all the dough is finished with the filling, and the pies are on the baking sheet, they need to be greased with the remaining yolk on top. Sprinkle with cumin, sesame or poppy seeds if desired.

11. Bake at 180 degrees in the oven until golden brown.

Culinary advice: instead of mushrooms, you can add eggplants, boiled or fried meat (chicken or beef) to the filling, pour the pies in a baking sheet with béchamel sauce, or simply pour grated cheese on top.
